I did some wings, burgers, and mango/habanero sausage on Big Z. Came out great. I'm finding if I start on 225deg, and then crank up to 375deg after awhile, the meats are much juicier and more evenly cooked. I start low until the meat temp gets 100-120, and then turn up to crisp.
I've been buying some beef trimmings. Its fat with some meat still on it. Butcher said it's what they use to grind in for burger. I've been frying up a few pieces every time I cook to bring up my fat intake some. Working out great.

Creamcheese spinach, green onion and red bell pepper stuffed loin. Turned out pretty good.the wife and kid liked it. Cooked just a touch to long. 90 min at 350. Should've pulled it at 75 minutes and let it rest.

I just can't justify spending what they want for chicken wings when legs and thighs are so much cheaper per pound.

I just can't justify spending what they want for chicken wings when legs and thighs are so much cheaper per pound. True. We only get them when on sale, or when truly hungry for a treat. I just paid $2.49/# fo our treat. Other prices recently... Ribeye, $18/#.... Porterhouse $8.99/# T-bone $9.99/#. Burger $3.78/# I mix cheap burger with our venison when cooking it. I'm not too keen on deer steaks, so I try to buy a couple a week to put in the mix.

Meijers a while ago had choice Angus Ribeye for $5.99/lb. I traded a buddy even up venison burger for beef burger, so I have 50# in the freezer.

We raise our own beef, but my wife buys the cheaper walmart hamburger and we mix it 50/50 with venison when we grind.

Got all the deer burger ground up on this gloomy day. Enjoyed a half a log of deer summer sausage while doing it. Ritz crackers with some honey mustard. Just awesome.

Made a nice spread last night. NY strip, eye of round, garlic jalapeno sausage, and bacon for dinner.
Tonight got a ribeye, pork steak, fillets, and garlic sausage. Salad with HB eggs and bacon to finish off. Life is good.
