Was the baking just on a plain sheet pan, or in a covered vessel like a dutch oven with some braising liquid?
I ask because my guess would be that you'd have really dried out squirell after baking uncovered on a tray at 350 for 2.25 hrs.

Still had my squirrel legs from last week in the fridge so into the crockpot they went with a package of venison medallion steaks from last month's doe and the calf meat super fresh off Friday's doe. Couple cups of water, liberal sprinkling of salt, and sort of liberal amounts of lemon juice. Tasted great.

I'm not in charge of the holiday meals today and tomorrow. But I am gonna contribute a few things to add to the enjoyment.
I was eyeing up prime rib, but I cant bring myself to spend that kind of coin in these uncertain times. Only discount stuff on the menu for the foreseeable future. Lol.
I have a small brisket flat going.
Smoked meatballs from breakfast sausage and burger.
Smoked cream cheese.
Bacon wrapped smoked jalapenos filled with my cream cheese mix.
Jalapenos stuffed with sausage and cheese.
Between vacations, hunting, holidays, and the recent catastrophic work stress, it's hard staying the course 100% on my lifestyle diet change. I've found eating more of the good things that fill me up right away has kept me away from the not so good for me stuff. As in, extra piece of steak before checking out the desserts. Helps a lot. Just gotta find what works.

We are having prime rib for Christmas dinner. Crab legs tonight. Fresh egg bacon sausage casserole for breakfast in the morning. Markers mark is the bourbon of choice tonight

Not spending anything I dont have to (within reason) and taking into account the extra Christmas expenses.

Little brisket flat was smoked to 165deg, fat cap down, then wrapped in foil with garlic. Pulled it at 205deg, applied butter and rewrapped, and left to rest for 5 hours in a cooler. Wow is all I can say.
First time ever smoking meatballs. Cooked till 165deg, then put in glass dish and dumped in enough tomato sauce to cover half. Sprinkled on parmesan cheese and cooked till 180deg. Hands down, my best work and results ever!!!

Smoked a turkey for dinner tonight. Really liking the way these are turning out. Will have plenty left over as it’s just the four of us for dinner and I’m perfectly fine with that.
