I found a small group of Chanterelles they were dry to the touch and yet rubbery and soft. Are these correct for picking, can you freeze them like Morels?

I’d say those are pickable. Not sure on freezing those as I haven’t done it. My buddy came over Friday and picked two bags of chanterelles, a bag of boletes, and about half a bag of coral mushrooms. He was a happy man.

I did a little research last year and ended up sautéing them then freezing them. You sauté them in some butter and will see some water come out of them, then sauté them a little longer until the water is soaked back up. Then they are good to freeze. I did this last year and they seemed fine a few months later when I fried them up.

Are these chanterelles? They are so bright orange at first I thought chicken of the woods but they have gills and stems.

I think what you have there is a false chanterelle or jack-o-lantern mushroom, which is NOT edible. True gills equals false chanterelle.

Field/Meadow mushrooms are up already. My mom picked a gallon out of my yard this weekend while I was gone.

I think what you have there is a false chanterelle or jack-o-lantern mushroom, which is NOT edible. True gills equals false chanterelle. Correct. Chants do not grow on wood. Jacks are on wood. The chants i have found were never as orange as jacks either but I would not let color be your only point to confirm. Also important to remember that a shroom that originates off wood can be growing off roots or buried wood.

My boss gave me a full bag of Hens last week. We cleaned and processed them and ate about half already!
Some guys are naturals at shroom hunting. I wouldnt know a frick from a frack. So I only get them when given to me by an experienced hand.

I found three good sized ones while hunting yesterday but didn’t pick them as I never have and wasn’t positive what they were. Went back to the camper and looked them up and sure enough that’s what they were. Found 5 total, but two were past prime for sure. Not sure how long they last out there, but may try and get them next weekend. I’ve never had them before.

Does anyone recommend freezing or dehydrating them? Never tried dehydrating them, I've frozen them before. Just cleaned, sliced and put in freezer bags. OK to use in spaghetti sauce or stews, I just like fresh ones if cooking as a stand alone side dish.

I cook like gonna eat right then, and freeze that way. Either way works fine.
