I think we need to see pictures too!! (I'm stuck working here close to home). You should of rode along Jay is going to post some photos his boy Luke caught a few nice ones I wish I could have. Had too much to do and didn't get it all done today, so I will have to finish tomorrow. I have to run to Topeka later on this week.

Making a rack of St Louis ribs and a whole cabbage for dinner. I hollowed out the cabbage some, put in some butter and spices, then a few layers of bacon slices down in and draped up over the hole. I had some good looking sausage ready to use, but it got iffy looking for me to trust. 🤬
Also got some Bass fillets ready to go swimming in an oil bath from yesterday. Worked my butt off today, so enjoying a few suds now and ready to eat soon.

us bank in my areaI gave these gizzards and hearts about a 5 hr bath in a home made mango BBQ sauce I had made up last fall then put them on the smoker

I smoked them for just over a hour and at half at a low temp to try and get smoke in them being small chunks I was worried they would cook a then be tough they are now in the crockpot I figure few hours they will be done and tender IDK first time I’ve tried them on a smoker

us bank open saturdayAlso took some tomatoes cut the top off dug them out and filled them with venison sausage garlic green onions jalapeños and cream cheese Also boiled some potatoes for about 20 minutes then put them on the smoker more to come on them

Turned out good on the do again list for sure but I believe I’ll add just a touch of bacon or pork sausage the venison was to lean and just a touch dry but still very good taste

Sorry about the photo i wasn’t checking them and only got one egg in the photo Another first for me I believe I may of over cooked them they tasted ok but got a bit on the rubbery side just the very outside inside was fine some olive oil might of helped

Made some stuffed green peppers filled with venison green onions garlic jalapeños mushrooms topped with blue cheese I’ve made these before I have always had good results Also cored and smoked some tomato’s thought I took a photo but I missed them the end product for those was salsa with a touch of smoke it also had a good taste I bagged it and put in the freezer going to pull it out in a few weeks see how it taste if it’s good I’ll make more with tomatoes of my garden this year

I'm working on some pork chops right now just grilling them on low heat. Those gizzards and hearts look interesting though! I don't think I would have been so nervous to pull them off the smoker though, that sounds like a really good idea!

I'm working on dome pork chops right now just grilling them on low heat. Thisr gizzards and hearts look interesting though! I don't think I would have been so nervous to pull them off though, that sounds like a really good idea! IDK but I can tell I just had a few out of the crockpot and they are very tender and dang tasty I put them back in mango bbq to finish very tasty indeed Going to try some beef liver I like it fried with onions good stuff but it will be my first try in the smoker. Best thing I made today hands down was the potato salad that’s got a real good taste to me anyway

Pretty creative today fellas!
I slacked off with the smoker. Got into a bees nest unknowingly and got hit 5 times in the legs and foot. That ticked me off pretty bad, so everything suffered after that, including supper. We just did some steaks on the grill with bacon on top, and corn. Then some fresh sliced tomatoes on salad was outstanding.

With the wind blowing I was getting a bath in clippings and when I got a face full I wiped my forehead. It wasn't grass clippings that was there..... Next pass around that area about 10 minutes later I had about 6 buzzing around me, one landed on the back of my left hand and it got me before I could brush it off, I had 2-3 others land on me that I quickly brushed off before they could get anything in me and I hit the get the heck outta here pedal on the mower. I gave that are a wide berth after that and tomorrow I will douse the remaining weeds with a hot Diquat mix. They will be brown by Wed and Wednesday night I will have a bonfire there...... Treetop, what's with the links for banking services next to some of your pictures? That stuff looks great on the grill.

Smoked 33lbs of pork belly on Saturday that had been curing for about 12 days. Must say this batch turned out great
