Smoked a rack of baby backs yesterday. I smoked 5hrs on 225deg, then wrapped in foil with bbq and French dressing for 3hrs on 200deg. Had a nice tangy flavor that everybody liked.
Gonna be putting on more cabbage shortly. Really getting to like that!
Looking forward to an old favorite later on today. I bought a bag of peppers to make smoked cream cheese filled jalapenos! The best!

Just got back from Lowe's with a Pit Boss vertical unit. Going to put it together, do a burn off, and load it with wings and legs.

A quick review of my Pit Boss vertical pellet smoker: I replaced an old worn out Masterbuilt. It served me well and no-doubt would have lasted longer had I cared for it properly. Bought from Lowe's for $450 Seems to be very well built. I think the box said #172. I didn't realize it until I had to lift it into the bed of my truck by myself. The recommended Pit Boss cover was $75. I bought a Char-Broil for $25 that fits just fine. Assembly is a P.I.T.A! Following the sequence of steps per the instructions is critical, trust me. Heats up very well. I did the original "burn off" for a good three hours @350. Seems to cook very evenly, which was an art to learn with my old Masterbuilt. I assume the fan is the difference. I've cooked a batch of wings & legs and three racks of ribs. Both turned out very well. I do wish there was a way to increase the smoke intensity. There is a button to press to auger more pellets, but I'd like to have an adjustable setting. Maybe there is and I haven't figured it out?
Anyone bought ribs lately? Sam's used to sell a 3-rack pack for $30+/-. Yesterday it was $54!

Hope that pit boss works out for you for years to come. And yes, the price of ribs is getting ridiculous, which is why I haven’t bought any in a good while. Have one more pork butt left, so now I have to be on the lookout for the .99 sale at meijer or Kroger.

St Louis ribs were $28 locally and baby backs $23. They can rot on the shelf for all I care at that price. I still got plenty of deer left, although not good for smoking, my grill works fine for that. Lots of fish and game in the days ahead. The canning jars will be going strong while this inflation keeps rising. Good luck to our economy.

So, this is a pic down by the thigh of a chicken I just smoked. Temp on my thermometer read 195°. Doesn't look done to me. Amy thoughts?

Hard to tell but I don’t think that’s done at first it looked like smoke colored meat but blowing it up it looks undercooked but blowing it up makes it harder to see it gets fuzzy at least on my phone it does

Put the probe in a glass of ice water if you can should read close to 32 maybe it’s off

I’ve had that happen before and I’m not trusting undercooked chicken. Think I just threw mine in the oven for a bit to finish. Sometimes getting the probe close to a bone or in a small thin piece of meat can get it to say it’s done too early. Outside looks fantastic though.
