Who do you guys use for specialty venison products? Smoked venison hams, bologna, breakfast sausage, etc? I have used River Bend Wild Game in Illinois, but it is a 2 hour drive for me. Would like to find someone within an hour or so of central Indy that does a quality job.

Glicks Butcher Shop in Fountain city, Wayne Co. Indiana. He'll make anything you want bologna, breakfast sausage, summer sausage, anything.
It will be farther than Knightstown, but you still get there around an hour drive time.

You can do one of 2 things take it to Webbs Deer Processing in Kentucky. Or what I do the guy I take my deer 2 in North Vernon when he gets 500lbs of meat takes a load down there. Webbs is something to see. It is all computer. I think they did 2600 deer last year.

Cannelburg Processing Plant makes some little sausage like things called "venison snack sticks". I've never taken a deer there but my buddy takes one there every year so I always eat a few when I'm over there. Usually get's about half the deer made into them but this year had about 90% made into them.. He gave me a couple bags and I'm trying to make them last. They're usually all gone come spring at the rate we eat em. I've tried "jalapeño and cheese" and "bacon and cheese" and both make you have to stop yourself from eating the whole bag. Good stuff.

I had Baker's camp (Bainbridge) do my summer sausage, spicy and spicy with cheese. It is very good. I wanted to go with knightstown, they were slammed though. The knightstown snack sticks are the stuff.

My uncle uses Klems or Clems. Not sure how its spelled. I think you have to bring in the ground and they make it for you but don't process the deer there.

I've got three of the 2-pound bags of jalapeno and pepperjack snack sticks from there left in my freezer from last month. Awesome stuff! I've never taken a deer there, even though they are probably only 45 minutes away, but the local processor "subcontracts" his specialty stuff to them.

KW in bloomington. They make the normal sausage/jerky jalapeño and cheese plus breakfast sausage and Texas links. The links are like a long brat that is hard to beat cooked slow on grill with mustard. Will customize most things to your liking. I actually helped trial and error the Texas links with the owner a few years ago as he tweeked the recipe he got from a large texss processer. They also do some hams as well.
