With my recent success on Lake Michigan with catching Lake Trout I decided to smoke some so I took 10 pounds of mine and 10 pounds of my neighbors to Lange's Meats in Michigan City and had him smoke them. www.facebook.com/people/Langes-Old-Fashioned-Meat-Market/100063445132535/Today we chopped up some salad cucumbers, tomatoes, and green onions with a splash of fresh lime juice. WE also made a salsa with 1000 island dressing, mayo, lime juice and dash of French dressing. I tried Asian sweet chili sauce and both were great as a salsa. We warmed up a soft burrito, spread the ingredients and "VOILA" a fantastic way to use smoked Lake Trout. Next time we are going to make a smoked fish pizza.
