Just home from another road trip and my grandson and I are trimming a backstrap from his recent deer. We got into a discussion on how long we should marinate the meat. On a different work trip I stopped at BoomLand near Sikeston MO and picked up a bottle of this: So he's thinking all day (6-8 hours tomorrow) is fine. I'm reading the label that says 2-4 hours. Thoughts?

I see that the ingredients for that marinade include lime juice and citric acid. I've heard that marinating meat for extended periods of time in citrus can cause a mushy texture. I think the citrus actually begins to "cook" the meat. Like ceviche. Im sure that 2-4 hours would be plenty. Sounds tasty btw.

I'd start with the directions on the bottle.
Myself I use Italian salad dressing and might marinate it any where from a couple hours to over night depending on how hungry I am.

I have one similar to this and they definitely work well. Use it a lot to tenderize thick pork chops into smaller pieces and man they’re good.

The marinade that I used on my jerky this year was a honey teriyaki 30 minute marinade, so I marinaded in the fridge for a week. I did it in a big ziploc bag and massaged it and turned the bag over every day.

Grandson Ty ended up marinating from the time he went to school to later afternoon. I would guess around 7 hours. He'll be cooking up shorlty.

Awesome! Awesome! Awesome! Hat sehr gut geschmeckt! as my Grandpa used to say in his "Mennonite-German" slang! "That tasted so good!" First off, Ty said he had this all in control. His deer, he's got it! He talked Grandma into buying a Lodge cast iron skillet on sale at Costco the other day so he was eager to use it again! He'd do it up right, he said! I said go for it! First cooked in olive oil and whatever else he mixed in: Then he drained the juice and Hot seared approximately 1 minute per side, making sure not to overcook: And then he drizzled his "secret" compound over the meat and served it up! My meal review? I'll give it a 9.5 out of 10! The peas were so-so! The meat was super tasty. I would say it might have had just a hint of gaminess. And we like it that way! Super tender! We literally cut every medallion in half with a fork! No knife needed!

I used to use the yoders-red game sauce similar to that or soy or yaki. Usually just olive oil and salt and pepper now it is nice to have options marinate for a day. If your tasting any game you are doing it wrong imo

We can tell from the taste that the meat is not “beefy” tasting! And that’s how we like it! And that’s the way we gonna do it!

That's fantastic to see a young man getting involved in cooking. Anybody can burn something on the grill using a stove and his choice of ingredients makes great.

I get the hard work for hanging one for two weeks and getting rid of all the slick and sinew and cooking it perfectly rare but it is worth it I'm not judging but an open fire or hot grill is always going to be better than a pan. It's an art imo

It's an art imo You make a great point on the grill. I’ve never been much on the grill but my grandson shows plenty of interest so maybe I need to look into that for him!
