The heat in my wife's 2008 Chrysler Aspen (5.7 Hemi) keeps going in and out. One minute it's fine, the next, cool air, and back and forth.
Heater core issue or something else?

Check the level of antifreeze make sure it’s full.

Have you checked on a Dodge forum yet to see other people's solutions. It's free, and you can also see what others have done to correct the problem/issue. I'd almost say it's the head/control unit, but others might have a different answer

Sounds like it could be trying to stick a little bit

Since it's a Hemi, have you pulled the oil dipstick yet? I know the Hemis are notorious for head gasket issues and that COULD be the problem. The only sure way to know is put a pressure gauge on the radiator and put about 40-50 PSI of pressure to it and if it leaks down, check the hose connections 1st. If no signs, then change the thermostat. If that doesn't fix it, get ready for head gaskets. You might as well have the block deck planned down and the heads as well since both should be aluminum

There are several things to check and do before condemning a head gasket! Think positive first!
As said, low coolant level, verify temp gauge is accurate and t-stat working, clogged heater core, collapsed hose, sticking heater control valve or damper door, etc. All these are very real possibilities.

Did you unplug it and let it reset for 10 seconds? My mechanic has me on the monthly blinker fluid program. $100 a month and he checks it, tops it off, changes filter every 4th check and an annual flush. My heaters work great.

On my VW, part of the service was change the anti-freeze every 2 years..........

For a $100 a month, he should rotate the air in your tires too. At least every other month.

Bet they will change your brake fluid also... wasted money IMO Everybody is allowed their opinion, but since brake fluid is hygroscopic, I never saw any rust in the brake fluid in the VW. They make two colors of fluid so you know when the old stuff is out of the system.

It could have been low for awhile, and just on the verge of the heat issue. Did you have any other work done where the coolant was removed and maybe had an air pocket in the system?
A pressure test is cheap and easy to verify a leak. It will push out coolant to visually show an external leak. There are also tests to show an internal leak, via mixing with the oil, or being burned out thru the exhaust as said.
Hopefully just a small external seep somewhere you didnt notice and easily repaired. Fingers crossed for you!
