This past week I was able to find some HONEY Mushrooms and I bagged a brace of Teal so today my wife and I prepared a meal to celebrate the beginning of the season of harvest.
We prepared 6 farm fresh x-tra large duck eggs sunny side up. My wife made a Avocado/red onion/ tomato spread and and applied it to some lightly toasted sourdough bread. The duck eggs were placed on top of that and sprinkled with fresh parsley.
The breasts from the Teal I got a couple days ago were sauteed in the duck fat of 2 smoked, fattened, farm raised duck breasts.
We also had wild HONEY mushrooms I found this week sauteed in butter with fresh spinach.
Washed it all down with some orange juice & coffee.

Duck breasts at 1:00, duck eggs with avocado spread on sourdough bread at 6:00 and spinach with Honey mushrooms at 10 :00.
