Caught quite a few crappie recently and looking for different ideas. I don't particularly like the soft texture, so thought that I might try some patties. Any recipes that you'd like to share?

I was looking into crappie ceviche, I've had it at camp a few times and it is awesome with tortilla chips. I would want a good quality cold water fish because the lime juice basically is what "cooks" the meat. There are recipes on the internet, I think mostly using salt water fish. It suits crappie well, though.

Had my share of salmon patties growing up but that’s about it other crab cakes at restaurants.

I used to take Norther Pike and grind up the fillets with the Y-BONES in them. Then I would make patties and fry them.
