But that's ok with us.
Today my wife and I enjoyed Morel Mushrooms, wild caught frog legs and Bullheads that we harvested from our property we also added some wild caught Lake Erie Walleye.
My wife wilted in butter and garlic 1 pound of fresh Spinach then divided it up into 6 equal portions poaching a farm fresh egg on each section topped with some Cipollini goat cheese.
While she was doing this she sauted the Morel mushrooms in butter.
I in the mean time was outside frying the fish and legs that were coated in Cajun seasoning while enjoying a crafted beer from Greenbush Brewery.
BTW: my wife's favorite fish is spring caught Bullheads.

Are bullheads the same fish I've always commonly called mudcats?
Never thought about eating them. A guy at work said he basically grew up on them in Mississippi, but they don't taste the same here.
