Well technically it was a groundhog. And you know what? It was actually pretty tasty. Shot one in the woods while looking for squirrels at my in-laws' farm a few days ago. I know they are a nuisance but Ive never really killed a critter and not eaten it. So I skinned it out and brought it home. Gave it a day in the brine. Went deer hunting this morning and when I got home my wife had a nice stew waiting for me. Nice and tender. I would go as far as to liken it to a beef pot roast. Would eat again. Anyone else ever eat one? Edit: The finished pic doesnt really do it justice. Apparently stews dont photograph too well. Also, all of my garnish is out in my garden in the pouring rain.

I thought groundhog was sausage. Actually I’ve never tried it but it has to be better than the opossum a friend of mine cooked up.

Yes i,'ve had them. I usually laugh when people ask why I would eat one. My reply is ground hogs are vegetarians and eat the same stuff cows and deer eat. What do chickens and pigs eat?? Anything you put in front of them! Put in crackpot till falls off the bone add some bbq sauce ready for sandwiches.

My wifes kin folk talk about eating younger ones in eastern KY and WV.
My buddy up here has eaten a few.
I'd try anything once, but I'm gonna pass as well. Not that hungry to make a meal out of one.
Good on you for giving it a shot. Too bad, as I trapped 8 in my MIL's backyard this summer. I could have kept you filled up. Lol

I was told (because I’ve never had one) that they taste a lot like bear. Any knowledge or truth to that?

I was told (because I’ve never had one) that they taste a lot like bear. Any knowledge or truth to that? I cant speak to that as Ive never had bear. First thing that came to mind was a beef pot roast. Different texture as theres really no intramuscular fat but flavor reminded me of a chuck roast.
