Going to fry some bass fillets this weekend. Give me you all’s favorite breading and techniques. I usually just egg/milk, flour and fry in a skillet but always looking for something different.

Equal parts cornmeal and all purpose flour, if you want it crisper add a little more cornmeal. Seasonsing wise I like Tony Chechres (sp) Cajun seasoning. I add enough of it until the Mixture has an orange tint to it. I get asked all the time where I buy my breading at.

Fryin' Magic cornmeal mix. Then I put some cajun seasoning in it. Super hot oil and only leave it in there for about a minute.

Kentucky Kernal seasoned flour. That’s what I’m talking about add a bit of salt pepper or whatever you like I always have a box of the stuff great if you want to fry pork chops vegetables you can make gravy out of it endless uses

Self rising flour,add preferred seasoning,half can of beer. Makes a great beer batter with a half can of beer to drink while you are cooking!

We got some recently at a discount store. We really like it! Now seen it at our local Walmart so got some more. Fish is good, pork chops are great! Are you guys using this flour dry or wet and mixing it with a liquid to make a batter? Dry for us. Added a little Lawrys garlic salt for extra flavor. Also put in some cayenne if you like. One thing I recently read is to add some dry pancake mix. Supposed to form a crust to keep internal more moist.

Just shake up the damp fillets in a bag or bowl of Andy's Original breading and fry in 365 degree peanut oil. Frying Magic original is also real good. About half & half flour and cornmeal is also a fine breading, spiced to your taste.
I'm not a fan of wet batter, or egg wash, makes the breading too thick. I want to taste fish.
Got to have homemade hush puppies with sweet corn mixed into them and some homemade coleslaw with every fish fry too. I believe it's state law?

Well we tried a beer batter with Bisquick. It was good but I also thought the breading was too thick. My wife thought it was very good but she likes the thicker breading. I also did some zucchini and it turned out good. Will try some of these other suggestions. I enjoy experimenting but also like the tried and true methods also.
