You guys are my go to people on many subjects. Last year my Bro-in-law and I fried a turkey for Christmas. It was ok but over done, we cooked to spcified time and at specified temps but when we pulled it and checked the temp it was way over and the skin was a bit too crispy. This year we would like to get a thermometer in the bird and watch that temp as well as the oil temp. Here's my question, have any of you used a digital thermometer with the long braided cord like the ones commonly used while smoking pork shoulders in this capacity or do I need to buy a specialized thermometer for this application? I'm only talking about the bird not the oil, I'll watch the oil on the old style dial thermometer.
Your thoughts, input and questions are much appreciated.

I looked it up and says it will work in deep frying oil. 180deg internal temp is what I saw for a turkey, or 3.5 min per pound. Double check all that, and good luck!

350 degrees and 3.5 to 4 minutes per pound. If under 15 pounds then 3.5. Over 20 then 4 minutes per pound.

Yeah that's what we did last time and it didn't turn out hence the question about the thermometer. I brine the turkey the night before and I heat the oil to 375 before I put the bird in. The cold bird will cool it down a lot.
