Bacon on Big Z is out if this world! I cook it till it starts getting dark, so its crispy. We do this often and use it as a snack when needed. Crunchy as potato chips and flavor like you cant believe. Here is last nights dinner, bacon and burgers. Cheap, fast, healthy!

We went to the Niles, MI Rural King (25mi) to see if we could get in on any other deals. They had zero discounts posted on hunting stuff, and zero pellets in the store! What a difference!

Just put some steaks, brats, and eggs in the smoker. Never done eggs like this so have no idea how they’ll turn out.

They weren’t bad at all. I prefer them fluffy and these came out more like a quiche, but they tasted just fine. Steak and eggs for dinner is becoming a more common thing now a days.

I dont hardly remember what scrambled eggs are anymore. Lol. Mine get fried after bacon and one quick flip. I like yolks runny now so it helps meat go down.

I really like smoked Salmon or smoked trout. When I lived in So. Cal. I'd smoke Pacific Barracuda and Skipjack Tuna. I liked Barracuda better, it wasn't oily like the Skipjack.
Budd, what do you use for Brine and what's your smoking technique? (wood, temp and time)

Eesshup, how long ago and for how long did you live in SoCal? My question is, is it really as screwed up and backward as we perceive it to be? They tell me California is a big place and it's not all bad but it seems to me that the whole state is bigger than it should be and I'm not a fan of any of it. All I see is what I see on TV and that can be exaggerated.

All I see is what I see on TV and that can be exaggerated. I came back to Indiana in 1997. I lived in Oceanside, just South of Camp Pendleton. Fuel was high, food was about the same, houses were more, but you got your $$ back when you sold. The people were friendlier because almost everybody was a transplant, and there were more gun ranges but you had to really get to know the right people to find them. The political climate has changed for the worse since then. I lived 10 miles from the ocean, and while we did need the furnace during the winter, there was maybe 5 days that I could have used A/C in the house. Even if it was 100°F out, the humidity was dry and at night the temps would drop 30°+F. I had Fig trees, orange/grapefruit and tangerine trees that grew on the property. I really miss going out on the ocean fishing, and miss having fresh seafood. From where I was, I could go snow skiing at Big Bear in the morning and go water skiing in the lagoon at Carlsbad in the afternoon. Run out to the desert to chase quail, run down to the border about 50 miles inland and hunt pheasants on the alfalfa fields next to the asparagus fields. My Springer Spaniel "Reba" actually retrieved a bird that flew over the canal into Mexico before dropping. You could go Mule Deer hunting out in the pubic ground near the desert, and chase turkeys in the mountains on public ground. I made friends with the Supervisor of the Southern Region of the California Natural Resources Agency, and had a ball. He knew a falconer and he had me bring Reba out to an area to run her for him. That was amazing, watching the falcon come screaming out of the sky to take a pheasant that she flushed out of the sky. Lots of good times, but after getting divorced, my grandmother got sick, and everybody was back in the Midwest so I moved back.

Deviled eggs will never be the same. Added some bacon bits and diced jalapeño to them. Man are they good!
