I agree with this. Only have done it twice now but it is wayyyy better than any other way we have tried Do you all use a wet or dry brine? I like the dry myself but have tasted some wet that were not bad. Used a wet brine. Used the recipe off of the Traeger App and brined it for about 18 hours. Let it set uncovered in the fridge on racks over night and then smoked it for about 5 hours.

3lb fillets with skin on 6 cups brown sugar 1 1/2 cups kosher salt 2 tbsp garlic powder 2 tbsp onion powder 1 tbsp ground black pepper 2 tsp cayenne pepper
1. Mix brown sugar, salt and seasonings together. Rub the dry brine all over the fish. Place fish in a bowl and be sure the fish is totally surrounded and covered in dry brine. Place in fridge overnight (8-12 hours). 2. Rinse the fish thoroughly and place in cool dry place for 2-3 hours to allow a pellicle to form on the fish. I have a fan blowing on them to quicken the process. I feel I get a better smoke penetration if I can get them dry. 3. Smoke for 5 hours at a gradually increasing temperature, I start at 120F and increase it 20F every hour. Leave it at 180F for the last couple hours or until the internal temp hits 140F. 4. I usually just place in small brown paper bag in fridge, have never tried to freeze as they usually dont last to long around here. Make great gifts.

That's the brine that I used when I first started smoking fish out in Ca. Barracuda, mostly, but also did Yellowfin and some Bluefin tuna.

Last couple day's. Took our little jackrussel whom has spent MANY days on the ice with me, will be his last long walk in to ice fish. He couldnt make the walk out so Brian carried his little buddy. Today we tried the tulipi at daylight, Brian got one. Jumped to a perch lake and kept a few nice one's, moved to another lake and took our limit of crappie. Retired gamewarden fished with us all day and had a blast. WE TURNED SEVERAL BACK!!!!

Did some fishing at the pond today between raindrops. Silver 1/16 oz. Little Cleo and a red head/glitter shad crappie tube jig.

They are Golden Rainbow Trout and regular Rainbow Trout. We stock them in peoples ponds for winter fishing, they typically last until the water temp gets above 70 degrees. They bite better during the winter than any other fish that I have in the pond, better than Yellow Perch, Bluegills, etc.
I also caught a couple of bluegills that were 8" or so, too small to keep, they need to grow a few inches.

Fishing has been hot last couple days. Lots of bluegills redears and especially bass.

Me and my youngest son have been Catfishing. He loves it! We haven't done too bad so far 5 here 4 there. Had one on last night that broke 10lb line. He was upset he lost his new bobber but we just fished until the current took it over to the other bank. Next time we will run a pole set up for bigger fish and try to get that monster in. We seen it flop up close to the bank and about 10 minutes later his bobber took off then under.

Went fishing today at my brothers place. Fished about 90 minutes and caught 2 crappie and 1 bass. Spent time putting up swarm box.He has a lot of dark to black honeybees. There must be a seasoned beekeeper near by.

Lot better action today at a local pond. My daughter was about to give up on fishing with the action for her being nothing the last few outings. She ended up with 12 bluegills and we brought home these 5 channel cats and let 3 others go. Not bad for an under 2 hour trip. Needless to say she once again enjoys fishing again.

Went to a farm pond yesterday with my oldest daughter. We brought home seven each of bass and bluegill and two very nice crappie. None of the bluegill were what I would consider keepers, but the pond needs to have some fish thinned out. The really odd thing was that we can normally catch a bunch of crappie. They weren't biting, but the small bluegill were hitting the jigs.

Surprising catch while fishing in Trail Creek at Michigan City for coho salmon. My boy got this smallmouth on 3rd cast with a Little Cleo spoon.
