In response to Treetops smoked skillet pizza I made this today.
Wild goose Italian sausage sandwiches.
INGREDIENTS:
1 Wild Canada goose breast which equals 2 halves fat trimmed and cut into chunks about 1"square.
1 1/2 pound of fresh Italian sausage (mild) my choice.
2 good size onions
About 1/3 of each a green and red bell pepper cut into narrow strips.
BBQ sauce (I prefer SWEET BABY RAYS) approx 16 oz.
1/2 cup of ketchup
2 bay leaves
salt and pepper
Boil your Italian sausage for about 25 minutes, set the meat aside and save the water.
To the saved water add a cut up onion, bay leaves, salt and pepper to taste and then add the cut up goose breasts, make sure you have enough water to cover the meat with about 1".
Boil for about 1 hour or until reasonably tender.
While the goose is boiling cut up the sausage in small bite size pieces and put them in a crock pot with another chopped up onion along with the bell pepper strips, the ketchup, and BBQ sauce.
When the goose meat is done add it to the crock pot and cook it on high for about 2 hours and then on low for about 1 hour.
Serve this on a Hoagie bun or in my case whatever kind of buns you have on hand.

But a single serve applesauce? All this good cooking I would expect a home made sauce like my mom used to make!

I have some snow goose that I was going to smoke...may have to make this instead. I have never had snow goose but have a few in the freezer. How do you normally cook it? How does it taste compared to Canadian, do you notice a difference?
