CANADA GOOSE:Those of us that hunt these nasty creatures will tell you there are very few recipes for these birds that come out tasting good and tender every time.
Some folks will turn and run when you tell them your going to prepare wild goose BUT that will all end with my new recipe.
Ingredients: 1/2 of a goose breast or a whole goose breast if your feeding 4 or more people, I will give you this recipe as if I were making it for a whole breast.
8 oz of cleaned and sliced/chopped portobello mushrooms
A small can of sliced black olives
About 25 or so cherry tomatoes sliced in halfs
2 small onions
2 bay leaves
8 pepper corns or fresh ground pepper and salt
shredded mixed cheeses
about 10-spinach taco wraps
butter
Instuctions: cut the goose breasts into 1-2 inch pieces and then place them in a pot of water about 2" over the top of the meat, add the bay leaves, 1 onion cut up, the pepper corns or salt and pepper to your choice.
Bring the meat to a slow rolling boil and boil/cook for about 1 hour or till somewhat tender to the fork.
Discard the water and cool the boiled meat then grind it up in a meat grinder, it will produce quite a generous amount of ground meat.
In a skillet saute in olive oil and butter 1 chopped onion till it starts to become translucent and then add the chopped mushrooms and cook.
In another skillet using a generous amount of butter crack 8 eggs or more depending how hungry your group is then add to the eggs the small can of sliced black olives, the cut up cherry tomatoes, the mushroom/onion mix and a generous amount of shredded cheese along with the ground goose meat.
Cook the above without overcooking it, you want it moist and loose, then warm in a microwave the spinach wraps.
You can serve it directly or you can smear some sweet salsa on the wrap.
The amount of ingredients will vary according to the size of your group.
You can add other favorite ingredients as you choose.
The most important part here is the GOOSE MEAT will be tender and unless you tell folks what they are eating they will have no idea they are eating wild goose.
