Found the usual one along the drive going back to set up new (replace the stolen one) trail cams but while up on the ladder installing the first the security box I just happened to notice another Hen of the Woods growing next to an oak right behind the trail cam tree. Brought up the one along the drive and left the new one to get a little bigger.....now just have to find time to fix the first one! Still haven't found any puffballs yet though-usually have several by this time.

This year there are hens around darn near every Oak tree at least it seems that way. I think it might have to do with all that heat and humidity we had this year.

How do you guys fix 'em??? The one I got last year I just put in the food dehydrator and bagged up-been using it in spaghetti sauce and some casseroles so far, but something tells me I'll have a lot fresher and better finds this year.

Like you do, but I'll also use fresh ones in omelettes, as a side to venison steaks, etc. Using them in spaghetti is a no brainer.

Toss them in some kind of oil and throw them on the grill use whatever seasoning you prefer I use Creole seasoning or garlic sometimes. I wouldn't use any seasoning with alot of texture though because the chanterelles tend to be gritty sometimes so I don't like to add to it with course ground seasoning.

Saw a couple today that were 6"-8" and barely starting to "leaf out". Left them to grow bigger. I will be back!!!!!
