I thought that you had to leave the majority of the front leg fur on the skin?
I also wonder if they added time for every hole that needed to be sewed up..........

The front legs can be mostly removed. I leave about an inch or so and tuck it in during the put up. They are not hard to skin once you learn a few tricks especially the front shoulders. Not letting them cool to much also helps. I am by no means fast. But less knife and more pulling is better.
