See'ins how opinions are like,, well we all know what opinions are like!!! Lets do a little end of the season opinion study amongst us!!! What is the best and worst tastin ducks?? In my opinion,, really I don't care for any of the fish ducks,, but some are a bit stronger than others!! and then as far as puddlers,, its the same,, some are a bit stronger than others!! My opinion on puddlers though,, I would rank wood ducks at the top and teal right below them. Not that there is anything wrong with the others,, but woodies to me have the smoothest/mellowest taste! I love them!! As far as fish ducks,, really I have not found any that I like,, but I also have not eaten very many different species of them. Some of the diver ducks that don't feast on fish are decent,, but I am still not a big fan of them either! To me nothing tops the all mighty and beuatifull woodie!!! What other suggestions we have amongst us? ?

Several years ago, A family friend once gave us a couple of Ducks and my Mother just baked them as she would a chicken. Boy, when she served them, none of us could eat it as the Ducks were VERY GAMEY!!

Boy, when she served them, none of us could eat it as the Ducks were VERY GAMEY!! = overcooked Wood ducks, mallards, geese....in about that order. the rest just get blended in with the above. Teal are good but mainly because how they are cooked...wrapped in bacon cheese and jalapeƱo on a hot grill and served with ice cold brews. Mmmmmmmmmmmmm

Mallards,Blacks,Pintails,Woodducks,Teal and Goose are all top notch but keep this in mind,you can kill 3 Mallards from the same flock and when cooked 2 might taste as if they spent their entire life in the clean waters of Canada whereas the third one may taste like it spent it's whole life in a sewage treatment plant.
Wild ducks are difficult to cook to perfection if you try to roast them because if cooked to long they become tasteless tire patches and if not cooked long enough they can be fowl tasting. The taste of a roasted duck is in the fat and wild ducks especially early season birds lack that fat. I have learned to make some real "SLAP YOUR MAMA" recipes that start out with boiling skinless breast meat until tender and tempered.
Most guys will wrap a breast with bacon throw it on a grill,over cook it and then when their wives eat it they don't care to ever eat it let alone cook it again. Pink and lightly bloody is the way to prepare them.

I'm right in line with most of you guys. The woodduck is the top bird. Then mallards, gadwalls, geese.

The only way I have found to make goose edible for me is to make jerky out of it. Tried baking, grilling, deep frying nothing seems to taste good.

When I go to Lake Erie in the spring it's almost mandatory that I bring my wild goose dip. I have learned to experiment with cooking wild game and I have made some of the most unbelievable dishes. Try it yourself it's fun.

Cook goose just the same as you would make Italian beef. Put some pepper jack and peppers on the sandwich. Just don't be late getting in line. Lol
