Woody, great article! I know this is a waste, but I am limited to freezer space. In the article he states that you can dry age the boned out breasts, but have to trim the "darken" meat? Wouldn't you have to do that to the exposed part of the duck, too? This article will definitely will be used (I bookmarked it), thanks.
