I've had a hard time finding a good book on wild meats. The market seems to be cornered by the brits. I'm a huge fan of Fergus Henderson's stuff. His books seem to show an awesome side of classical british food but it makes me want an american equivalent.
So anyone have a suggestion? Maybe a tried and true book or two that you can't live without?

Kill IT and GRILL it by............Ted Nugent The Game and Fish cookbook by............Timothy Manion The Ultimate Wild Game cookbook by .........Babe Winkelman If you you like waterfowl you can't go wrong with the Ducks Unlimited cookbooks. I love to cook and so I generally don't use a cookbook, I experiment a lot. Few tips.........remove fat, silver skin, blood bruised meat, and most of all do not I repeat do not over cook, leaving most game rare to med rare is advised.
BON APPETIT !
