I've never used a hook. Might have to try one next time. And, I'd guess that he's done one or two before also!

First thing I picked up on the video, other than the hook and method of cutting he used with the reversed grip knife and pushing it away from him instead of down..........was that his knife was EXTREMELY sharp.......or maybe just looked that way to me. Lotsa leverage cutting with the method he used. Hooks are good, Parson.........for me at least. They don't BLEED near as much when I whack it with my knife by mistake. As Ive gotten older, and only doing my own, speed dont come into the picture so much anymore so dont use one much. God Bless

Amazes me how fast that guy is, I know I'm slow but man, he makes me feel like I'm backing up. I didn't notice the reverse grip on the knife at first and after watching again it appears to me that it isn't always a reverse grip, you have to really watch to see him switch back & forth on the grip. Guess I will have to invest in a hook.

fastest deer me n my guys ever cut was 5 min 44 sec off the bone cut and ready to wrap and grind.

The guy is fast for sure! The only thing he does Im not in favor of is sectioning the muscles in the rear hams. I like to cut round steaks and his method wouldn't allow that. h.h.

It looked like that guy didn't washout the Deer, before cutting. I would have washed it out with a hose until clean & stopped dripping. Noticed also the guy wasn't wering any protective gloves.

Interesting techniques. Almost made me nervous the way that knife was moving. I just take my time, and it's not like I have a pile of deer to get through. I can usually get one into the freezer in a couple hours by myself.

That was pretty good. I would love to have a table like he has. The hook was a good idea as well. I've only cut myself a few times and the times I have it's mostly because the knife is getting dule and miss a cut or something. But like someone said the hook would bleed less and with it I think i would have more confidence in my cuts.. Thanks for the video!! BB
