Try dumplings, in a pot pie, or chunk the meat, stir fry with olive oil, garlic, and onion sliced long ways, add some broccoli later, and serve on a bed of Japanese rice. Touch with soy sauce if you like.

I haven't hunted rabbits in quite a few years, but I used to cook the meat off the bones and make barbecue with it. Everybody seemed to like it. Back then I used bottled bbq sauce.

I like russian recipe since I am a Russian. Rabbit in Sour Cream recipe
Ingredients: 1 3-lb rabbit cut into 10-12 pieces 1 medium onion, chopped 2 cups sour cream 1/2 cup dry white wine 2 tbsp brandy 3 tbsp butter 1 large bay leaf pinch of nutmeg mushrooms salt ground black pepper
Method: Season the rabbit pieces with salt and pepper and fry in butter until a brownish-red crust forms (the meat does not have to be cooked through at this point). Remove from the pan and place on the bottom of a Dutch oven or a heavy casserole. Return the pan to the heat and saute the onions (adding more butter, if necessary), until they are tender and slightly golden, about 10 minutes. Drain the onions on paper towels and add to the rabbit. Add mushrooms. Whisk together sour cream, wine, and brandy. Pour over the rabbit and onions. Bring to a simmer and season with salt, pepper, and nutmeg. Add the bay leaf, cover, and simmer over low heat for 45 minutes. Serve with pan-fried potatoes.

I just can't get away from frying rabbit. I de-bone the back and hind legs so that they cook faster and more completely (about the same time to cook the front legs). Wash, flour, salt and pepper while frying, YUM!

Rabbit jerky is very good too. Debone the meat and grind then mix with your favorite seasoning. The rabbit jerky I made taste like ham. h.h.
