I've helped him once or twice, used to shoot winter league at his shop. It's been a couple of years though since I was there but I know he was limited on freezer space for processed deer. Walk-in space he had plenty of, but at times I know he was waiting on people to pick up meat before he could process anything else. Not sure what happened with yours, but sounds like you've got the butchering figured out.
