hello everyone, i am new to turkey hunting and i was woundering how to clean the turkey. I will want to do a fan mount with also. any info will help thanks.

There is not a whole lot of meat on the legs. LOTS of tendons so I just breast out any turkey I'm lucky enough to kill. Just slit the skin straight up right down the middle of the breast and kind of peel back the skin to both sides. Then cut down through the breast as close to the breast bone as possible. Do that onboth sides of thebreastbone . Then cut in from the sdies and remove the left and right side of the breast, I'll defer to the taxidermists on here about the fan mount question...

Here's what I do. Cut across the butt hole, large enough to get my hand in. I take out all the entrails, but leave everything forward of the diaphram, heart, lungs. It's that simple. Then I put a bag of ice inside the turkey. After checking in, I start with the butchering. I only keep the breasts, which some people might not agree with. Cut the skin away along the breast bone till you can see the meat. Once you get in there it's not real hard. I start cutting down each side of the breast bone till I have all the white meat out. When cutting the tail feathers off, I usually start in back, cutting crossways and pulling up on the feathers at the same time. I will cut more than I need, then when I make my fan mount I can trim some of the small feathers.

Hey Indybrad, I got my first and only bird two years ago and was crushed when I couldn't get to the check station in time but they did say on the phone that I couldn't breast it out or clean it until it was weighed. That was two years ago and hope that never happened to anyone else. The breast meat was still good but wasn't too keen on leaving the guts inside overnight.

I think you can clean the guts out. I know you can't breast it till it's checked in. I didn't see anything in the hunting regulations saying you couldn't gut it, but I might be wrong. if I am wrong, I guess I'm going to have to get a big cooler

You can gut them before you check them in.
I sure wish they would do away with the check in and just let you call it in. I kiiled a bird late afternoon last year and had to put it in the freezer overnight and take to the check in station the next day.

Commonly, I will breast out the bird. The directions given here in this thread will get that job done. On occassion I skin the whole bird and use the breast for a meal, and the rest of the carcass is baked/or boiled for soup stock. That is really about all it is good for.
As far as the fan. I would recommend you take it to a taxidermist for the removal, because unless you have done it before, you can mess it up. If you have a freind who has removed several, you could ask him to help. The key areas to be aware of on fan removal is the oil duct and the rectum. Identify both and cut straight into the fleashy part of the body at each point. Make sure you remain below the quill line and stay in the flesh.
