Local meat processing plant here said it was safe to let them hang below 45 degrees. In the past I have hung them at or below that temp with no problems.

If temps drop into the 30s at night, up to about 50 during the day is OK, if you can keep the deer in the shade.
I prefer high temp no higher than low 40s to 45, and 30s at night. I'll hang them a week if the temps are ideal.

If the temp. is in the 50's and fails to fall below 45 at night; I skin my Deer, cut it, and place it in an Ice Chest. Better to be safe than sorry.

when its warm. pack the cavity with ice, leave the hide ON the carcass. it keeps the heat out and the cool in. When its real hot. I wrap it all up in a tarp. deer will be as cold as if it was in the frig Ive kept them in 80+ weather this way for 3 days no problem.

with the temps they are predicting, for this weekend. its to the check-in station and back to the tree. cut immediately and put in a cooler with ice.
Just never much, let one hang anyway. never could tell the difference, in the taste

I was thinking about that today. When I used to drop off my deer at a processor they would have piles of deer by Saturday evening and Sunday. I'd hate to drop my deer off to a processor this weekend.

I have an old fridge in the garage with all of the shelves taken out. I skin it, quarter it, and put it in the fridge no matter what the temp is.
