I myself dont only eat the meat but the heart too. Just got turned onto it last year and we've cooked a half dozen of em or so and they always taste great! Takes a bit to prepare it and trim it but it is very good on sandwiches. Ill include the recipe i have but if someone else has a recipe let me know i wouldnt mind trying another approach. Like i said i love the way i do it but maybe someone else has a good way of doing it? Ingredients: deer heart 3 cups of water 1 teaspoon salt 1/2 teaspoon red pepper flakes 1/2 teaspoon marjoram 2 bay leaves
MUST TRIM FAT FROM HEART AND REMOVE VESSEL TUBES! If you do not do this it will be very chewy!
In a suitable pot, bring the three cups of water to a boil and add salt, pepper flakes, marjoram, and bay leaves. Cut the heart in half length wise. Put both halves into the pot and boil, covered for an hour. Let the heart steep in the liquid while it cools. Put the heart into a suitbale dish, then cover with part of the pan liquid. Refrigerate and slice (across the grain) as needed for sandwich meat. Very thin slices work bext. Use it as sandwich meat with lots of good mayonnaise. One deer heart will usually make enough sandwiches to serve 2 to 4 people for lunch. Also try thing slices atop thin crackers along with a dab or creole or dijon mustard.

My dead-eye shots usually destroy the heart. I think I'll try this recipe this year. Do you eat any of the other organs?

I usually clean them real good, slice em about 3/8 thick, throw some Sweet Baby Ray's on 'em and broil or grill them on high real quick. Got to let them sit in some salt water for a couple days(change it every day) before you slice them though.

Eaten a few of them. Not bad but don't go out of my way to bring everyone home. Eaten a live before too, not bad.

The heart is the first hting I eat of the deer. It is probably my favorite part of the deer to eat. I have had liver also but don't care for it. Lost of the time I slice it into this strips, powder with salt, pepper, garlic powder and flour then pan fry. I also like to make them in a Crock Pot over night. Nothing like a hot meal before hunting in the morning.

When I used to live in western Maryland I knew several people who pickled deer hearts. Never asked for the recipe.

The owner of a farm that I used to hunt always wanted the heart, liver, & especially the kidneys from my kills. Being an older gentleman of German decent he dearly loved his kidney pies...

Never had the heart but I have had the testicles. Really not to bad if you can get over the idea of it, like rocky mountain oysters. Tastes like fried mushrooms. Anyone else?

Kidneys,heart,liver,and tounge,all are eaten.I love the liverof deerbut seldom eat beef liver.The tounge has to be par boiled to take the outer membrain off the meat.It makes great sandwitches.Kidneys need to be in salt water for a day or two,changing water at least every day.Great eaten folks.Neck shoot em if at all possable,no trackin, and ya get to eat ALL the goodies.pan.
