processed my first deer from start to finish it took me aroun 5 hours with a couple of trips back and forth to watch the video. some parts did not look very good but over all it went really well with a few more tries i should be pretty good and no more trips to the processors.

Feels good doesn't it. I started just the same a few years ago, makes the hunt more complete even sacred I suppose. Not knocking good butchers... The meat tastes better and I know exactly how it was handled. Don't worry about how it looks that part will fall in place after a few jobs.

I butcher my own because A. I can. B. it saves money and C. I KNOW I'm getting MY deer, and I KNOW how it was cared for from field to table! Good on ya for taking the time to learn this important part of our sport!

Good butchering will come with practice and experience. I agree with Decatur that knowing how my venison is handled is a very big plus-that I can also let mine hang for a few days if the weather is right. AND like big D said it is an important part of the sport and makes you appreciate your tablefare that much more.
