Over the years of making jerky, jerky and more jerky from my goose meat last year I decided to try something different. I had some brats made and they were good but not great. This year I've taken the meat to a different processor and had regular and hot summer sausage and hot snacks sticks made, yep now we're getting some where. So I tried the same processor again and just got back another batch of the regular, cheese, cheese with jalapenos summer sausage and brats. After supper tonight I got to say I'm having the majority of meat made into brats for my next round.
Now all I need to do is kill a few more geese. ;D

My dog usually eats real well after a goose hunt. Maybe I will try your idea.
I can vouch for the hot summer sausage 410shooter had made, best I've ever had by FARRRRRR.

I went hunting w/a guy from LaCrosse and he had cooked up some goose sausage and MAN was that GREAT! They make it themselves! I've always wanted to try making goose & noodles (using beef broth as a base) since IMO goose has that stringy "beef" texture.

Cook a goose breast in the crockpot with onion, green pepper and seasoning and its delicious.

I had some from a buddy that was made into bbq beef sticks. Best beef sticks I've ever eaten.

How much meat do they need at the processor? They will take what ever you bring and add beef, pork or both to get what is needed for their packaged seasons. I've taken goose, duck and deer burger and had pork added.
