We had our anuual Sunday School Christmas party last Saturday and on the table was some "Beef Salami".
It looked like summer sausage so I took a few pieces. It was goooooddddd.
I asked the lady for the recipe and here it is.
Beef Salami
6 pounds of lean ground beef ( substitute ground venison with beef fat added) 1 tsp. garlic powder 4 tsp. hickory smoke salt 2 tsp. onion powder 6 T curing salt 2 T coarse ground pepper 2 T mustard seed 1 1/2 cups of water
Mix well in a large bowl Refrigerate 24 hours Shape into logs ( about 7) Bake on a rack on a cookie sheet 325 degrees for 90 minutes. Leave in turned off oven for 30 minutes more. Cool, wrap in plastic wrap.
I'm guessing this mixture could be stuffed in casings too??

I'm sure you could stuff these into fiberous casings and leave in the fridge over night. A 20% fat ratio would probably keep it moist.
