Is it legal to hunt county land thats not posted. Like around creek bottoms . Outside of city limits of course.

Most likely not. You will need at least verbal permission from the landowner to hunt a piece of property that is privately owned, including county property. The presence or lack of posted signs mean nothing...one can be arrested for hunting/fishing without landowner consent regardless if the land is posted or not.
