Ive been experimenting a little and came up with a new venison summer sausage recipe. Its cheddar cheese and jalapeño. Man is it good! I took out the seeds and chopped up the jalapeños in to small pieces and mixed it with high temperature cheddar cheese. Its not too hot and you get the flavor of the jalapeño without the heat and the cheddar cheese. Good stuff! h.h.

Sounds very good. The REAL hot part of the pepper is the inner membranes. The actual flesh of the pepper is not nearly as hot if you remove the 'innards'. My brother has a wonderful recipe for this. I could live on it. And this year, I have every intention of taking at least two deer, as I DO have vacation time I will ACTUALLY be using in the manner in which it SHOULD be. . . . ;D

hey HH, i've been doing that for about 4 or 5 years now for my customers try it without chopping the peppers then as you slice it it will have a nice pepper ring (or part) in it, also get some high temp pepperjack cheese and add peppers with it, you'll never go back to the cheddar. (try some of that pepperjack mixed in a meatloaf with some chopped up pre cooked bacon).

I tried the pepper jack and didn't like it as much as the cheddar. did you take the seeds out of the peppers before you put them in? i made another batch tonight to take to my friends in Florida. its good stuff. h.h.

no, i buy the pepper rings at gordons and drain them then add 3/4 jar per 25lb of summer sausage

Let me tell ya that stuff Dabutcher makes is so good it'll make ya slap your mama. I brought some elk to him a few years back he did a fine job with that jalapeno & cheese. Heck my buddy and I had a roll about gone by the time we got home from picking it up...

Where do you get the "high temp" cheese? I can provide a testimonial for hornharvester's summer sausage. It is awesome.
I have a jalapeno plant that is putting out peppers left and right.

I'm trying to use up my deer burger from last year so made another batch of summer sausage today with cheddar cheese. Made 4 - 3 lb sticks. It will be done Monday. MMMmmm.... h.h.
