In college we were too lazy to get casings and stuff our brats. Just patted out patties and tossed some smack you in the face good brat burgers on the grill.
I will have to try that chorizo recipe, love the stuff.

I agree Chico, Chorizo is quite tasty! I fry it up with eggs or hash browns, wrap it in a flour tort, and chow down!

One thing I would add when using natural castings, that I didnt see, would be to soak them in warm water a few mins before use. This softens them up and makes them easier to use.

I have stuffed some and I had to put them over the faucet in the kitchen sink to seperate them enough to stuff the meat into them. Sort of like a water baloon. I soaked them first, also got the salt off the casings. I just used a spoon, but one of those sausage stuffer adaptors would have been easier I think.

We have a lug that is full of water, and we pull the castings out as needed. Like stated above it also gets the salt off. If the castings dry out, they are very hard to work with. Any castings that you dont use, put them back in the container with the saltwater soulution that they came in and re refrigerate.
