I think its in the right thread. 54 deer in the first day it was one hell of a year. We did over 600 deer, and we still arnt done with all our smoked meats. Just thought I'd share.

WOW!! I'd say that you are a big time operator.. That is a lot of deer. Do you think your take was up or down this year from last? I don't think my procesor took in as many as last year. He got one less from me for sure............

Last year we did about 570. Our take is up, but it was more spread out. The colder weather we had was allowing people to hang deer longer this year. Last year was warmer, we just got hammered, and had to turn people away. There were a few days this year that we were filled up during firearms as well and had to tell people to come back in a few days. Most didnt seem to mind with the cold temps.

I guy I go to when its hot in Pleasant did 1100. Do you make sure your people get there own meat back?

Yes and no, The thigs we cant keep separate are the smoked products. I would simply be to confusing and difficult. Our stuffer pumps out a 150-200 pounds at a time and to do small 10 or 20 poud loads would be a waste. Having a mixed batch also helps keep taste and texture the same in every load. Better consistancy.
