Do you fellas perfer "whole mussle" or the "ground" version.
We have been jerking for the last week, trying a bunch of different things.
I made a batch that I am very proud of.
I over dried a batch then put it in a bag and added Jim Beam. I let it sit for about 24 hours and all the moisture absorbed into the over dried meat.
It was chewy and had a real nice hint of Jim Beam, along with the smoked flavors.

Sounds good, I like the ground for an easy chew. The strips are good too, just harder to eat.

I to use ground up deer. I use Hi Mountain Jerky cures. They are all very good.

I like the strips-harder to eat, but more traditional. I cut up a roast or two and put them in a bowl with 1 bottle of terriaky soy sauce, 1 cup brown sugar, crushed red pepper, and a can of Coke. I let it sit overnight. Then, after putting the strips on the dehydrator I salt and pepper and add other dry ingredients (season salt, lemon pepper, whatever you like). It's pretty good.

I like the traditional jerky myself too. Our customer seem to agree as well,we get one or two that ask if it is processed and when we tell them no they are happy. Ours is a very basic seasoning (sorry cant tell) and we use a hickory smoke. Mmmmm.....good.

All of my is ground meat jerky with my own recipes which I offer three different flavors.

I use ground and the ole jerky cannon...I like it better that way. I buy all the backwwods mixes and etc.
