Made about 10 pounds worth (of 100% waterfowl breast meat) snack sticks and logs in the oven this weekend. Turned out great.
Used the recipie in the Mortons Salt cook book. Easy to boot.

Sweet. I make a lot of goose jerky, but I'll have to try the pepperoni.

You should try the peperoni sticks...I am impressed. I have had the whole muscle sliced jerky and thoght it was OK, I guess any ground jerky/snack stick style would be really good.
