How do the sausage makers on this site stuff their casings? Last year was my first year at this and looking to improve. I had used my grinder with stuffing tube attached. I always tended to get a lot of air mixed when filling. I'd poke the casing with a pin to release the air but that's a pain and seems like extra work.
I'm told stuffers do a much better job. I see primarily two types. One with a handle you push down and the other with can and has a crank.
I ordered a meat mixer from Cabelas today to make blending of everything together better than using your hands.
Are stuffers worth it?

I have a Dakotah water stuffer. It hold 10 lbs of meat and is powered by water so you can use two hands to work with the casings. The one I got was reconditioned from the factory and cost 50.00 less than a new one. I like mine. h.h. www.dakotahsausagestuffer.com/

Do you have problems of trapped air in the casings while filling? Also, when you order your high melt cheese how long of shelf life does it have as packaged? I'd like to start stocking up on supplies now.

I'd like to start stocking up on supplies now. Yes it hooks up to the kitchen faucet. I had to buy an adapter from the local hardware to hook up the garden hose fittings. Once you XXXXX the end of the casing then no air. If you are getting a lot of air then you aren't keeping the stuffer tube into the meat as it fills. The cheese comes in vacuum packed package. Last time I bought 5 lbs and use my food saver to pack it into 1 lbs bags and stored them in the freezer. Ive got 1 lb left from over a year ago. Once you open it the cheese crumbles apart. It takes a few times to get use to using the water stuffer. It works better if you use some Chrisco on the o-ring. Makes if slide easier. The secret is not to use full pressure, just enough so the meat flows steady. I really like it for stuffing summer sausage with the cheese because it makes a better finished product. It doesn't smash the cheese up like my grinder did. I mounted mine on a piece of 2x12 so its nice and stable. First couple of times you use it you will get water on the counter but after a few runs you get on to it. Pretty easy to clean up. h.h.
