Question... I breasted out the doves I killed last night, and soaked them overnight in some salt water. The question is, how long can I leave them in water in the 'frig before I have to cook them and/or freeze them? I was wanting to fix them this week, but it will be Wed or Thur before I get a chance to have them.
One more part to the question, when you freeze dove, do you submerge them in water and freeze, or freeze in a freezer bag with no water?

I freeze them in water if can't vacccume seal them. You will be fine to keep them in salty water till Wed. I would change the salt water daily though.
I would also make a marinade of 3 oz. burboun, 1/4 cup WHATSTHISHERESAUCE, tons of black pepper, a spash of soy. Let them soak overnight and then wrap them with a piece of green onoin and a strip of bacon. run a toothpick through it and throw them on the grill till the bacon is starting to get crisp. A little wild rice and you got a meal fit for a king!
*** NOTE*** you can also you use 6 oz burbon. make the marinade same as above but set aside 3oz in a seperate glass. While grilling, mix the X-tra burbon with you favorite cola and drink.......
