Get some of that crumbled up blue cheese (the real stuff) and mix it up in your burger patties. Make the patties big and thick with square edges. Wrap a strip of bacon around the edge, tooth picked in place. Grill them slow and don't flip them too much as deer burger tends to fall apart. Then pig out !
Great stuff! My buddy whipped up a batch of these last night.

Good post. I do the same thing with extra-sharp cheddar & diced jalepeno wrapped in fresh-side bacon.

We tried it and didn't care for the blue cheese. It was the first time I had ever ate a deer burger cooked on the grill. I am planning on trying this recipe with some type of other cheese or something mixed in.
Anyone have any suggestions?

Blue cheese is a like it or hate it style of cheese. Just do plain deer burger on the grill, a bit dry but with a big old fresh tomato, pickle, onion, cheese melted on top you won't notice. I'd guesss you could add any type of crumbled cheese to the patties to get the melted cheese in the center, otherwise just put a slice on top after it is done.

I grind about 1/4 to 1/3 pork shoulder in with my deer burger. Makes it stick together better, provides a little fat for frying, plus the pork adds good flavor. Lot's cheaper than bacon.
