Here are a couple good wild game recipes to try out: VENISON STEAK WRAPS Take a small venison steak and pound it out w/ meat hammer. Wrap steak around a slice of hot pepper cheese and a hunk of pepper. Wrap half a slice of bacon around the works and toothpick things together. Grill medium rare until bacon is done. BLUE CHEESE DEER BURGERS Crumble up plenty of real blue cheese and mix in w/ deer burger. Make big 1/2 lb patties about 1-1/2" thick with nice square edges. Use a glass for a cookie cutter to get the nice square edges if necessary. Wrap a strip of bacon around the outside edge of the burger and toothpick in place, much like a resturant would prepare a fillet. Grill on low heat until medium rare, blue cheese will be bubbling out of the burgers. STEINY's FISH BATTER 1/2 Italian bread crumbs 1/2 Flour Ample amounts of; pepper, garlic powder and seasoned salt. Just throw wet, thawed out filllets in a paper bag of this mixture and shake it up good till fillets are thoroughly breaded. Drop the breaded fillets in good hot oil and fry golden brown. All of the above recipes are recommended alongside ice cold brewskies.

I usually marinate the meat overnight in Italian dressing, wrap around a piece of pepper jack cheese and a jalapeno slice and then wrap bacon around and grill. This is a GREAT recipe to introduce folks to wild meat. I've had women that have snubbed their nose at game meat tell me this tastes like fillet. It's an annual event at one of our camping functions. I'll have to try the blue cheese burgers...It's only after 7 am here, and I'm already hungry now! ;D

Whole Backstraps kick butt too !
Take a whole backstrap and wipe it down w/ olive oil. Hit it hard with your favorite spice mixture and rub it on heavy. I like a product called "Grub Rub". Wrap a couple strips of bacon around it and toothpick in place. Put it on hot coals and sear the outside crisp, very quickly. Then put on cool side of grill and cook until meduim rare. Important not to over cook.
Good enough to make you want to smack your Momma !

A local joint makes the best roast beef sandwich. I got the recipie and it goes great with venison roast.
Art's Roast Beef
In a slow cooker, put about 3#s worth of roast. 1 whole onion sliced 2 green peppers sliced 1 lg can tomato sauce 1-2c. water 1/4 teaspoon sage salt to taste 1/2-1 1/2 teaspoon anise 1 teaspoon red pepper 1/2 teaspoon garlic powder 1 teaspoon sugar
Cook all day then tear apart the roast(s) when done.
You could remove liquid and cook down on stove top to thicken then put meat back into it. I dont mess with that.
It is very good!

My easy way out on deer roast is to put it in a crock pot and pour on a bottle of Marzetti's Low Fat Itatian dressing.

Will you guys stop this! I'm out of Game meat and birds! I can't take this much more. I think some drool landed on my keyboard. So I'm not going to tell you my secret recipe until I get something from the feild. And then I'm going to tell you while I'm eating it, so there!

Might have to get something thawed out this afternoon.
Down to about 10 packs of venison burger and maybe 2 packs of steaks. Working out about right. Should have it all cleaned out about the time season starts. Need to whack a big doe early to replentish the larder.
Had a little fish fry and cleaned up the last of my fish last weekend too. Need to get a few more before deer season starts.

Steiny, fixed those blue cheese burgers yesterday for my wife and myself. That is some good stuff ;D
Wife doesn't care for burgers as much as me, but she said she could eat those on a regular basis. Good thing cause I got a good amount of burger left.
