Can someone recommend a good one? I am in the market for one in the near future, but I don't know where to begin.

I prefer butchers steel & butchers ceramic. Check with dabutcher for specifics.

Those are good for keeping an edge once you have honed a sharp one, but if it is really dull you need to re-grind the knife to a sharp edge, the steel just polishes the edge giving the edge a nice crisp edge, then after you get a good edge be very generous with the steel. Typically I will use a steel before and after I use a knife, and if it is a big job, I will use it anytime I notice the cutting ability of the knife slipping.
There are plenty of sharpening tools out there, from $2 to over $100. Get one that you can set the angles at different settings as typically a fillet knife has a different angle then a pocket knife or butcher knife. Those tools that have set angles work fine with knives that are that angle, but not as good with a different angle

The montec sportsman stic is a good sharpener. I have several sharpeners that are a pain to use until I found this sharpener. Run your knife thru it a couple a times.... I dont care how dull it is and it will be sharp. Its about 20.00 , small enough to fit in your pocket , and super easy to use and it works. If I didnt have this I would use ceramic sticks of some kind. It Sharpens broadheads also.

I have a tri-hone 3 stone set at home for bench work when it really needs a lot of work. After that I hit it with a butcher's steel (smooth) to finish it.
I also have ceramic and rough steels as well for a quick hit sharpening.
For the field I have a DMT Diafold diamond sharpener in extra fine that i use that fits in my pocket and will sharpen anything I need when away from home. I find myself using the Diafold more than anything else any more.
IMO - the Diafold will do everything you need in one small package. Just don't get the medium grade - get a fine or extra fine. I had to order mine since the stores here only had medium grade.
