Just pulled them off and about forgot to take a pic of them done. One is cut up and there’s even a nice little smoke ring on the breast meat and man is it good and tender.

I’ve smoke a lot of fish in my big outdoor smoke, this is my first try on a pellet smoker. Any tips? Sturgeon and a couple silver salmon going in!

With trout, I just lay fillets on foil, then sprinkle with whatever rub I use on everything else, then cook till 140deg.
I cant speak for any other fish.

I’d give it a go for sure. Always wondered how sturgeon taste. Good!! I let the thicker sturgeon go to 155 internal temp. 140 on the salmon.
