I sometimes accidentally make cottage cheese in milk jugs every now and then. Not worth eating though.

A long time ago we got a kit and tried to make mozzarella cheese. It turned out okay, but we got maybe 5 oz from a gallon of milk.
It probably would have been a lot better with better milk and a larger batch that made it feel more worthwhile.

For me it was just a bit of a let down to see how little I got in the end. It also probably didn't help that I really like soft fresh mozzarella and mine was not as good as that. You may have better results with some top shelf milk as a starting point or maybe making a different type of cheese.

I investigated by watching YouTube videos. It was a long process for the cheeses I was interested in.

From what I’ve read raw milk gives a better taste It just so happens I have small dairy farm a few doors down. I’ve never asked him if he could or would sell me some milk I know the board of health has rules and regulations about it

Yes you need raw milk to make good cheese and get more per gallon. You cant make cheese out of water. I'm sure you might be able to find some locals that have goats milk as well.
