Instead of paying for smoked pig femurs at the store, I smoked some deer leg bones for our dog. 3 hours at 275° seemed to turn out pretty good. I tried a little piece of meat that was left on where the tendon connected. Dried some it pulled right away from the silver skin and tasted awesome. Gave the dog a piece of meat from it and he is now following me around for more! Soon as he finishes off his current pig femur he will get half of one of these.

I do this too and its cheaper than than buying them. Most of your butcher shops just throw them out.
