I got the last of last year's venison out of the freezer this past Saturday. Ground it up, seasoned it, let it set for 3 days- and now have 4 rolls of Summer Sausage cooking in the oven, filling the house with the wonderful aroma!!

Well, the wife gave it a good review, so it's probably not spicy enough! We did take a pretty good sampling before vacuum packing & freezing most of it. It'll likely be mostly gone by the time that the Holiday season is over. I did find another bag of ground venison in the freezer, so I'll have to get out the jerky gun!
