I love cucumbers and onions in a cream sauce so I went and added some zucchini to it and it was great.
Recipe
1 cucumber 1 medium onion(prefer sweet)or more if you like 1/2 cup diced zucchini with heart/ pith removed. Give or take Big dollop of mayonnaise /Miracle Whip White sugar to tast(I like it just a little sweet so the tart in the miracle wipes is present but not over powering. Little milk or water.
Peel cucumber, cut in half long ways and use a spoon to remove seeds(this helps keep salid from becoming watery if not all used and If seeds are big and tough makes it better.) Dice into 1/4 in pieces Dice onion Peel zucchini remove center and dice into 1/4 in pieces. Place all 3 into a bowl. In a separate bowl mix miracle whip sugar and just a touch of milk or water(you want just enough liquid to make the dressing creamy so it sticks to the stuff not runny. Play with the amounts till you find a mixture you like. Pour over other mixture then stir and eat or refrigerate till cold if you can wate that long.

We like to use zucchini instead of cucumbers for pickles. They dont get soft or mushy as fast. So far, everybody has loved them. Also, fried or grilled zucchini or even cucumbers are fabulous. Lots of variables to play around with.
