For years I've used Uncle Al's (based in Walkerton, IN) as a dry coating on fish and venison. I used a mix of their Original and Cajun. I was running low and went to the local Mom & Pop Grocery store to buy more, and I was told that they went out of business about 6 months ago. My cousin in Wyoming called and wants me to ship him more too, and before I call him I'd like to have some suggestions for him to try as a replacement.
So, the search is starting for something to use now. I typically have the fish/venison moist, put it in a zip loc bag that has the dry coating mix in it, roll it around until it's coated, them put in hot oil. I will store that bag in the freezer and keep re-using the same mix until it runs low, them start a new bag.
Thoughts/suggestions?

Kentucky kernel seasoned flour. Or Zatarains fish Fri. Both are good Kentucky kernel is wheat based, fish Fri is corn.

We have tried a bunch over the years. Always go back to original Shore Lunch. Just saying.

Half flour, half Italian bread crumbs, then add some garlic, salt & pepper. Half flour, half corn meal with salt & pepper isn't bad either. The "standard" Andys breading is good too.

Andy's fish seasoned mix is fantastic ( I like the Yellow) but the red is good too. I also like Drakes seasoning on milder fish like lake perch or crappie.

Take a tube of Sour Cream and Onion Pringles and put them into your blender or food processor with 1/2 a cup of corn meal, 1/2 a cup of flour, and 1/2 a cup of rice flour. Mix in a teaspoon each of salt, pepper, garlic powder, onion powder, and paprika and then blend until it's a fine powder.
Double or triple this recipe and you can make a year's supply at a time and keep it in your freezer in a ziploc bag like you've been doing. You can adjust the salt if you like it more or less also. I've never found a better fry mix I could by.
I made up this recipe years ago when I had a mess of catfish to fry but not enough flour left to make a proper fry mix. I tried it once with corn flakes instead of pringles and it was still amazing.

I use Andys for fish. Really like it. Comes in a yellow, red or cajun type. I prefer the red myself.

I tested it on some chicken and wow... fantastic! We're going after catfish this weekend so if we do well enough I'll post some pics of the delicious results.
